Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
In a large mixing bowl, combine the rolled oats, blueberries, lemon juice, honey (or maple syrup), and melted coconut oil.
Mix well until all ingredients are evenly coated.
Press the mixture firmly and evenly into the prepared baking pan.
Bake for 25-30 minutes, or until the edges are golden brown and the bars are set.
Remove from the oven and let cool completely in the pan before lifting out using the parchment paper overhang.
Cut into bars and serve. Store in an airtight container at room temperature or in the refrigerator.
For a chewier texture, use quick oats instead of rolled oats.
Add a pinch of salt to enhance the flavors.
