Place the sweet potato fries in the air fryer basket in a single layer. Avoid overcrowding; you may need to cook in batches.
Air fry for 15-20 minutes, flipping halfway through, until the fries are tender on the inside and crispy on the outside. Cooking time may vary depending on your air fryer.
While the fries are cooking, prepare the chipotle dip. In a small bowl, combine mayonnaise, Greek yogurt, minced chipotle peppers in adobo sauce, lime juice, garlic powder, and salt. Mix well.
Taste the dip and adjust seasoning as needed. Add more chipotle for heat or lime juice for tang.
Serve the air-fried sweet potato fries immediately with the chipotle dip on the side.
For extra crispy fries, soak the cut sweet potatoes in cold water for 30 minutes before tossing with oil and spices. Pat them dry before air frying.
Adjust the amount of chipotle peppers in the dip to your preferred level of spiciness.
If you don't have Greek yogurt, you can use sour cream or crème fraîche as a substitute.
Serve immediately for best results. Reheating may cause the fries to lose some crispness.
