Dip and coat the chicken: Dip each chicken breast into the egg mixture, allowing any excess to drip off. Then, dredge the chicken in the breadcrumb mixture, pressing firmly to ensure the crumbs adhere to both sides. Repeat for all chicken breasts.
Bake the chicken: Place the breaded chicken breasts on the prepared baking sheet. Drizzle lightly with olive oil.
Bake for 20-25 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown. The internal temperature should reach 165°F (74°C).
Add sauce and cheese: Remove the chicken from the oven. Spoon marinara sauce evenly over each chicken breast, then top with shredded mozzarella cheese and a sprinkle of parmesan cheese.
Broil (optional) or bake: Return the chicken to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly. For a more golden-brown top, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
Garnish and serve: Remove from the oven and garnish with fresh basil, if desired. Serve immediately.
