    Thaw frozen cauliflower rice and frozen broccoli in a large pan over high heat, covered. Once thawed, remove the lid and continue cooking until all water evaporates and the vegetables are slightly cooked. Set aside to cool, then dice and transfer to a large mixing bowl.

    Add ground flax seeds, salt, pepper, onion powder, garlic powder, dried parsley, fresh dill, cumin, coriander, cayenne, and sesame seeds to the mixing bowl. Mix thoroughly to create the falafel mixture. Fill a pan with approximately ½-inch of coconut oil and melt it until hot.

    Heat the coconut oil in the pan until hot enough for frying. Scoop 2 tablespoons of the falafel mixture into your palm and press it into a 1-inch thick disc. Let the cooked falafel cool for 5 minutes before serving.
