Instructions

    To a large skillet over high heat, add the oil. Once the oil heats, add the ground beef and let it cook for 3-4 minutes without stirring. Once the beef browns, finely chop the onions, celery, and garlic and add them to the beef.

    Cook for another 3-4 minutes until the beef is cooked through and the vegetables are fragrant. Transfer the meat mixture to the crockpot. Chop the mushrooms and add them in.

    Add the tomato paste, mustard, broth, cream cheese, smoked paprika, salt, and pepper. Stir well. Cook on low for 4-5 hours or on low for 2-3 hours

    When the soup is ready, add the cheddar cheese. Stir until it melts completely. Taste and adjust seasoning if needed.

    Divide the soup into 4 bowls. Garnish with a little more grated cheddar, sliced pickles, chopped tomatoes, and sliced green onions. Serve immediately.
