Instructions

    Place the raw cashews in a bowl and cover them with hot water. Let them soak for at least 4 hours, or preferably overnight.

    Heat olive oil in a pan over medium heat. Roughly chop the onion and cook for 2-3 minutes until translucent. Mince the garlic and add it to the pan, cooking for 1 minute until fragrant.

    Add 1 cup of chicken stock to the pan with the onion and garlic and bring to a boil. Reduce the heat to low and simmer for 7-8 minutes, until the onions are soft and most of the stock has evaporated. Remove from heat and set aside.

    Drain the cashews and add them to a blender. Add the remaining chicken stock, cooked onions and garlic, lemon juice, nutritional yeast, coconut cream, and black pepper. Blend for 2-3 minutes until the sauce is super creamy.

    Taste the sauce and adjust the salt and acidity as needed. Store in an airtight container in the fridge for up to 3 days. To serve, reheat in a pan and drizzle over your favorite steamed vegetables.
