Description

These bacon-wrapped ribs are a delightful dance of savory and sweet, crafted to satisfy cravings while keeping healthful eating in mind. The pork ribs, the heart of this dish, are first lavished with a vibrant, colorful spice rub, a carefully balanced blend designed to permeate every fiber of the meat. This infusion of flavor creates a deeply satisfying base that harmonizes perfectly with the other elements.

Each rib is then lovingly swathed in crispy bacon, layer upon layer, transforming them into tantalizing bundles of deliciousness. The bacon doesn’t just add its signature smoky flavor; it also provides a textural counterpoint to the tender meat beneath. The contrast between the crisp bacon exterior and the juicy interior of the ribs is a key element of this recipe’s appeal.

The cooking process is a two-step method that ensures optimal results. Initially, the ribs are baked at a high temperature, a crucial step for rendering the bacon to crispy perfection. This initial blast of heat transforms the bacon, creating a crunchy, flavorful shell that encases the ribs.

The heat is then lowered, allowing the ribs to continue cooking gently. This slow, low-temperature baking ensures that the meat remains succulent and tender, preventing it from drying out. The result is ribs that are both crispy on the outside and incredibly juicy on the inside.

Finally, the ribs are brushed with a luscious honey butter glaze. This glaze adds a touch of sweetness that complements the savory flavors of the pork and bacon. The honey butter melts into the crispy bacon, creating an irresistible sheen and adding an extra layer of flavor complexity.

This final touch elevates the ribs from simple comfort food to a truly special dish. These bacon-wrapped ribs are perfect for a satisfying dinner, a weekend barbecue, or even for meal prepping. Their rich flavor and satisfying texture make them a crowd-pleaser, and they can be easily portioned and stored for later enjoyment.

Whether you’re serving them to family, friends, or simply treating yourself, these ribs are sure to impress with their delicious combination of flavors and textures.

Instructions

    1.
Prepare the ribs in advance to allow ample time for marinating. Note that the ingredient list accounts for the rib MEAT; for each ounce of meat, include an ounce of bone. To make 4 servings, you will need at least 22 ounces of raw ribs with bones. Rub a clean rack of ribs with olive oil, massaging any fat marbling. In a bowl, combine salt, pepper, paprika, onion powder, garlic powder, thyme, oregano, and basil to create the dry rub. Thoroughly coat the oiled ribs with the spice mixture. Place the ribs in a Ziploc bag or airtight container and refrigerate for at least 6 hours, ideally overnight or up to 24 hours for maximum flavor.
    2.
After marinating, preheat your oven to 500 degrees Fahrenheit (260 degrees Celsius). Line a sheet tray with aluminum foil to catch drippings, and place a baking rack over the tray. Slice the marinated ribs into individual pieces, keeping the bone intact. One by one, wrap each rib with 2 slices of thin-sliced bacon, tucking any loose ends underneath. Place the bacon-wrapped ribs on the prepared baking rack, ensuring they are evenly spaced.
    3.
Place the tray of bacon-wrapped ribs in the preheated oven and bake for 30 minutes. As the ribs bake, melt butter in a small dish and mix it with honey and liquid stevia to taste, adjusting the sweetness as desired. After 30 minutes, remove the ribs from the oven and reduce the temperature to 300 degrees Fahrenheit (150 degrees Celsius). Generously brush the sweet honey butter mixture over the ribs, ensuring they are completely coated and glossy.
    4.
Return the ribs to the oven and continue baking for a minimum of 2 hours. This longer baking time will result in tender, juicy rib meat that still clings to the bone. For fall-off-the-bone tenderness, reduce the oven temperature to 250 degrees Fahrenheit (120 degrees Celsius) and cook for 4 or more hours. Once the ribs are done cooking, remove them from the oven and let them rest for 10-15 minutes before serving. If measuring servings with the bone, each serving will be approximately 3 ½ ounces. Without the bone, each serving will be about 2 ¾ ounces.
