Description

Imagine a vibrant salad that captures the essence of the season, bursting with fresh flavors and colors. Begin with a bed of mixed greens, a foundation that welcomes an array of delightful ingredients. Picture plump, juicy blackberries scattered throughout, their sweetness a highlight of the dish.

But the true magic lies in the homemade blackberry dressing, crafted from freshly pressed berries. While it requires a touch of effort, the reward is a dressing that elevates every component of the salad. Warm, golden chicken pieces transform this salad into a satisfying and complete meal, perfect for lunch or a light dinner.

The dressing, infused with basil, harmonizes beautifully with each ingredient, creating a symphony of flavors that dance on the palate. The secret to a great homemade salad dressing lies in balancing fat and acid, creating a rich and tangy taste that awakens the senses. A touch of sweetness and a complementary flavor element complete the profile.

In this recipe, olive oil and lemon juice unite as the fat and acid components, while blackberries provide natural sweetness, enhanced by the addition of fresh basil. Feel free to experiment with different vinegars in place of lemon juice, and explore other fresh herbs to customize the dressing to your liking. For those who prefer to meal prep, the dressing can be made in larger batches by blending the blackberries before pressing and storing it in an airtight container in the refrigerator for several days.

When blackberries are not in season, other berries such as strawberries, raspberries, or blueberries can be used as substitutes, depending on availability. The leafy greens can also be adapted to the season, with options like spinach, arugula, or red leaf lettuce offering a variety of textures and flavors. Pecans add a deliciously rich flavor, but other nuts such as almonds, peanuts, or walnuts can be used as alternatives.

If you prefer a tangier flavor and creamier texture, feta cheese can be replaced with goat cheese. With endless possibilities, you can create countless salad combinations that showcase the best of each season and add excitement to your meals.

Instructions

    1.
Make the dressing first. Use a fork to mash 5-6 blackberries per serving into a mushy pulp, until the liquid separates. Press the blackberries through a sieve to collect the juice and discard the seeds and pulp. Whisk the olive oil, lemon juice, and chopped basil into the blackberry juice. At your discretion, you may also add a pinch of stevia to your dressing, but you may find you don need it. Set the dressing aside and re-whisk when needed.
    2.
Combine the ground chicken and olive oil in a small pan. Break the ground chicken into chunky pieces - not too small. Season with the salt, pepper, Italian seasoning, and onion powder. Cook over medium heat until the chicken fries to golden brown edges. Set aside to cool slightly.
    3.
Prepare the salad by arranging your lettuce on a plate. Top with crumbled feta, chopped pecans, extra blackberries, and the warm chicken. It is you choice to pour the dressing directly onto the salad, served on the side, or toss with the lettuce before plating.
