Instructions

    Trim the bottoms off all the sprouts and cut them in half. Preheat a large nonstick skillet over medium-high heat until hot. Add the ghee and swirl the pan until it is coated with the fat.

    Add the Brussels sprouts cut side down into the pan. Not all of them will fit in a single layer so pile any remaining sprouts on top. Turn the heat down to medium. Allow the sprouts to sear for 2-3 minutes, feel free to turn the heat down slightly if they are browning too quickly. Then begin to toss the sprouts occasionally once they are browned on the bottom. Keep tossing them like this until they are cooked to your liking, about 5-7 minutes on low heat.

    Once they are cooked nicely, combine the mayo and lime juice and pour it over the sprouts. Toss them to coat in the mayo dressing. Plate the sprouts and sprinkle with cotija cheese and tajin seasoning. Serve immediately.
