Instructions

    Preheat your oven to 250 C. Cut up the cauliflower head into small florets and pulse them in a food processor until they reach a rice consistency. Transfer to a bowl.

    Add ¼ tsp salt to the cauliflower rice and mix to combine. Microwave it for 5 minutes until it softens. Let it cool for another 5 minutes.

    Transfer the cauliflower rice to a cheesecloth or kitchen towel. Squeeze out as much water as you can. Return the cauliflower to the bowl.

    Add the mozzarella, parmesan, egg, coconut flour, garlic powder, and ¼ tsp salt to the bowl. Mix until a dough forms. Tip the dough onto a piece of parchment paper.

    Knead the dough a couple of times, then shape it into a sphere. Press the dough, starting from the center going outwards to form a round crust. Slide the parchment onto a baking sheet.

    Bake in the oven for 10-15 minutes or until the edges start to become golden and crispy. At this stage, you can add sauce and toppings and bake the pizza for another 10 minutes. Let it cool for 5 minutes, then slice and serve.
