    Preheat oven to 325 degrees Fahrenheit (163 degrees Celsius). Line a baking sheet with parchment paper. Separate 2 eggs. In a stand mixer, whip egg whites with cream of tartar until stiff peaks form.

    Set whipped egg whites aside. Wipe the mixing bowl clean. Whip together remaining egg yolks with cream cheese, stevia, and vanilla until a lump-free, pale yellow batter forms.

    Gently fold the whipped egg whites into the egg yolk batter using a spatula. Be careful not to deflate the air bubbles.

    Use a tablespoon to measure out approximately 24-26 tablespoons of batter onto the lined baking sheet. Bake immediately for about 17 minutes, until the edges are lightly golden and easily release from the parchment paper.

    Once baked, let the cloud pieces cool fully. Prepare the ganache: chop 2 oz. of dark chocolate and place in a bowl. Have a hand whisk, piping bag (or zip-lock bag), and plastic wrap ready.

    Heat 3 oz. of heavy cream in a small pot on the stove until it simmers. Do not boil. Immediately pour the hot cream over the chocolate. Do not stir yet.

    Place plastic wrap over the bowl of chocolate and cream. Let it sit for about 120 seconds. Then, use the whisk to stir the ganache together until smooth.

    Flip the cloud pieces over to expose the flat sides. Scoop the ganache into the piping or zip-lock bag and cut the corner. Pipe about 1 1/2 tsp of ganache onto HALF of the cloud pieces.

    Sandwich the cookies together with the remaining cloud pieces. Allow the ganache to cool fully, or enjoy while the chocolate is still melted and gooey!
