Description

This cream of lettuce soup offers a surprisingly delightful and comforting meal, perfect for a light lunch or a simple supper. It’s an ingenious way to transform everyday lettuce, perhaps a bit past its prime, into something truly special with just a handful of kitchen staples. The beauty of this soup lies in its accessibility – it’s both economical and quick to prepare, making it an ideal choice when you crave a warm, satisfying dish without spending hours in the kitchen.

Imagine a velvety smooth broth, infused with the subtle, fresh taste of lettuce. The creamy texture coats your palate, delivering a soothing warmth that spreads from the inside out. This soup isn’t just about using up leftover greens; it's about creating a harmonious blend of flavors and textures that elevate simple ingredients into something extraordinary.

While this recipe calls for iceberg lettuce, known for its crispness and mild flavor, feel free to experiment with other varieties. Butter lettuce will lend a delicate sweetness and an even silkier texture to the soup, while romaine will contribute a slightly more robust, earthy note. Each type of lettuce will impart its unique character to the final dish, allowing you to tailor the soup to your personal preferences.

For those who prefer a dairy-free option, this soup can be easily adapted. Substituting coconut oil for butter introduces a subtle hint of tropical sweetness, while coconut cream creates a rich and decadent texture, mirroring the luxuriousness of heavy cream. With a few simple swaps, this versatile soup can be enjoyed by everyone, regardless of dietary restrictions.

The possibilities are endless, and the result is always a bowl of pure comfort and flavor. This soup is more than just a recipe; it’s an invitation to explore the endless possibilities of simple ingredients and create a dish that nourishes both body and soul.

Instructions

    1.
Melt the butter in a large saucepan or Dutch oven over a low/medium heat. Thinly slice the onion and the garlic. Add the onion and garlic to the pan with the melted butter. Stir well and sweat gently until softened and fragrant. This will take roughly 2-3 minutes.
    2.
Add the stock to the saucepan along with a pinch of nutmeg. Stir well. Bring up to a gentle boil and simmer for 2-3 minutes. You may use a chicken stock or any other stock or broth you prefer. You may also add salt and pepper if desired, depending on the strength of seasoning in your stock.
    3.
Roughly chop the lettuce. Add the lettuce to the saucepan/Dutch oven and stir. Let the lettuce cook gently in the simmering stock until only just wilted.
    4.
Remove the soup from the heat. Add the cream cheese. Carefully use a hand stick blender to pur ée the soup until velvety smooth. Alternatively, you may let the soup cool a little then carefully transfer to a free-standing blender to mix, working in batches if needed. Do not pour boiling hot soup directly into the blender.
    5.
Stir the heavy cream into the soup until well combined. If needed, return the soup to the stove to gently warm through. Serve the soup hot with sliced low carb toast or buttered Keto bread rolls.
