Description

Imagine a warm, creamy block of feta, infused with the bright flavors of the Mediterranean. This baked feta dish transforms a simple block of cheese into an elegant and intensely flavorful experience, perfect as a starter, a side, or a sharing plate. The feta is nestled amongst fragrant garlic and sweet onion, their aromas mingling and intensifying as they bake.

Juicy tomatoes add a touch of sweetness and acidity, complementing the salty tang of the cheese. A scattering of pine nuts provides a delightful crunch, contrasting beautifully with the soft, yielding texture of the feta. Fresh basil leaves, with their characteristic peppery-sweet notes, complete the symphony of flavors.

A generous drizzle of olive oil binds all the ingredients together, adding richness and depth. The feta is baked in a foil parcel, allowing it to cook gently in its own juices, absorbing all the surrounding flavors. As the cheese bakes, it becomes incredibly tender, almost melting in your mouth.

The foil is opened towards the end of the cooking time to allow the top of the feta to turn a lovely golden brown, adding a touch of visual appeal. The retained cooking juices are a treasure in themselves, infused with the flavors of the garlic, onion, tomato, and basil. They're perfect for spooning over the cheese or mopping up with your favorite accompaniment.

The versatility of this baked feta dish is one of its greatest strengths. Serve it warm with toasted bread or crackers for a satisfying appetizer or snack. It also pairs beautifully with a fresh salad of mixed greens and roasted bell peppers, adding a creamy, flavorful element to the meal.

The combination of salty, tangy, sweet, and herbaceous notes makes this baked feta dish a truly unforgettable culinary experience. It's a simple recipe that delivers complex flavors and textures, perfect for any occasion.

Instructions

    1.
Preheat the oven to 400 degrees Fahrenheit. Arrange a large square of aluminum foil on a work surface. Place the feta cheese whole in the center of the foil square. You need the foil to be large enough to completely close up around the fillings.
    2.
Thinly slice the tomato and layer over the cheese. Thinly slice the garlic and sprinkle over the top of the tomatoes. Thinly slice the onion and arrange over the tomato and garlic. Roughly chop the basil and scatter over the top along with the pine nuts. Drizzle everything with olive oil and sprinkle over the black pepper.
    3.
Wrap the edges of the foil up around the feta, sealing the ingredients inside, creating a loose parcel. Bake the cheese for 15 minutes. Open up the foil, ensuring that it still creates an edging to contain the juices. Bake for a further 5 minutes to brown the cheese and pine nuts. Serve immediately.
