Description

Roasting vegetables transforms them into culinary delights, unlocking their natural sweetness and creating a satisfyingly crisp-tender texture. This method is a fantastic way to incorporate a wider variety of vegetables into your meals with minimal effort. Simply toss your chosen vegetables with seasonings and roast them on a sheet pan until perfectly caramelized.

This recipe features a vibrant lemon, garlic, and olive oil dressing that complements a wide array of vegetables, but it truly shines when paired with broccolini and asparagus. The slight bitterness of broccolini is beautifully mellowed by the roasting process, while the asparagus spears become delightfully tender-crisp with lightly charred tips. If broccolini is unavailable, broccoli florets make an excellent substitution, offering a similar earthy flavor and satisfying texture.

The magic lies in the simplicity of the ingredients. Fresh lemon juice brightens the dish, lending a tangy zest that awakens the palate. Minced garlic infuses the vegetables with a savory aroma and a subtle pungency that deepens as it roasts.

Extra virgin olive oil coats the vegetables, helping them to brown beautifully and adding a rich, smooth mouthfeel. A generous pinch of salt and freshly ground black pepper enhances all the flavors, creating a harmonious balance that is both comforting and sophisticated. As the vegetables roast, their natural sugars caramelize, creating a symphony of flavors and textures.

The edges become crisp and slightly sweet, while the insides remain tender and juicy. The lemon juice intensifies, creating a bright and tangy glaze that coats each piece. The garlic mellows and sweetens, infusing the entire dish with its unmistakable aroma.

The result is a vibrant and flavorful side dish that is sure to impress even the most discerning palates. Serve it alongside your favorite protein, toss it with pasta, or simply enjoy it as a light and healthy meal. The possibilities are endless.

Instructions

    1.
Preheat your oven for 375 degrees Fahrenheit. Cut the ends off of the broccolini and asparagus. Cut about ½” off of the broccolini and 1” from the woody ends of the asparagus.
    2.
Grate the clove of garlic and zest a lemon into a small bowl. Add the salt and olive oil and mix together well.
    3.
On a large baking sheet (cover with parchment if you’d like), arrange the broccolini and asparagus so they’re touching as little as possible. Drizzle the olive oil mixture on and massage the oil into the vegetables, especially into the broccolini florets.
    4.
Roast the asparagus for about 12-15 minutes (depending on their diameter) and the broccolini for 15-20 minutes. Enjoy!
