Description

Imagine a comforting bowl of chicken stew, brimming with savory flavors and wholesome ingredients. This isn't just any stew; it's a culinary experience that nourishes the body and delights the senses. Picture tender pieces of chicken, simmered to perfection with a medley of colorful vegetables, creating a symphony of textures and tastes in every spoonful.

The foundation of this delectable stew begins with succulent chicken thighs, their skin adding richness and depth to the overall flavor profile. As the chicken simmers, it infuses the broth with its savory essence, creating a foundation that's both hearty and satisfying. Aromatics like garlic and onion dance together in the pot, their fragrant oils permeating every corner of the stew, while celery adds a subtle herbaceous note that elevates the dish to new heights.

Green beans and Tuscan kale contribute both color and nutrition. The green beans offer a gentle sweetness and satisfying crunch, while the Tuscan kale wilts down into tender ribbons, imparting a slightly earthy and subtly bitter counterpoint that balances the richness of the other ingredients. All of these elements are brought together in a luscious sauce, crafted from ripe tomatoes and flavorful chicken stock.

A splash of balsamic vinegar adds a touch of acidity, brightening the flavors and creating a harmonious balance that will leave you craving more. This stew is incredibly versatile. Enjoy it as a satisfying lunch or a comforting dinner, knowing that you're nourishing your body with wholesome, real ingredients.

Its simplicity makes it ideal for busy weeknights, yet its depth of flavor makes it worthy of a special occasion. Serve it alongside a fresh, vibrant salad for a complete and balanced meal, or spoon it over a bed of fluffy cauliflower rice for a lighter alternative. No matter how you choose to enjoy it, this chicken stew is sure to become a staple in your kitchen.

Instructions

    1.
Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add chicken thighs, skin side down, and brown for 5 minutes. Flip and cook for another 5-6 minutes. Remove from skillet and set aside.
    2.
Finely dice the onion and celery, crush the garlic. Add onion, celery, and garlic to the skillet. Sweat gently for 2-3 minutes until tender and fragrant.
    3.
Add diced tomatoes and stock to the skillet. Bring to a gentle boil, then reduce to a simmer. Season with salt and pepper, stir well.
    4.
Add balsamic vinegar and green beans to the skillet. Stir well. Simmer for 5 minutes to soften beans and reduce sauce.
    5.
Roughly chop kale, discarding tough stems. Add kale to the skillet, stir until just wilted. Return chicken pieces, nestling them in sauce and vegetables. Simmer for 5-6 minutes until chicken is cooked through. Serve hot with Keto sides.
