Description

Imagine a breakfast that transforms the familiar comfort of pancakes into a delightful, bite-sized experience. These mini pancakes, akin to cereal, offer a playful twist on a beloved classic, perfect for both kids and adults alike. Crafted from a straightforward batter, these tiny treats are surprisingly easy to prepare, making them an ideal choice for busy mornings or a fun weekend brunch.

The batter, a harmonious blend of simple ingredients, comes together effortlessly. The almond flour lends a subtle nutty flavor and creates a tender crumb, while the egg provides richness and structure. A touch of baking powder ensures a light and fluffy texture, creating the perfect balance in each tiny pancake.

For added convenience, you can even prepare the dry ingredients the night before, streamlining your morning routine. The magic truly happens as you transform the batter into these miniature delights. Using a small scoop, gently drop tiny dollops of batter onto a preheated pan.

The key is to maintain a consistent size, ensuring even cooking and a uniform texture. A stiff spatula proves to be an invaluable tool, allowing you to deftly flip these little pancakes with ease. Alternatively, if you possess the skill, chopsticks can also be employed for a more precise maneuver.

A light coating of coconut oil in the pan between batches ensures that each pancake achieves a delicate golden-brown hue and prevents sticking. Due to their diminutive size, it is best to preheat the pan to a moderately high temperature before reducing the heat to low. This will provide ample time to portion the batter into small pancakes without burning.

Once the pan is filled with these miniature circles, you can increase the heat if desired, although the first pancakes will likely be ready to flip by then. Serve these pancake "cereal" in a bowl with your favorite toppings. Fresh berries add a burst of sweetness and color, while a drizzle of maple syrup enhances the overall indulgence.

Sprinkle some chopped nuts for a delightful crunch, or add a dollop of whipped cream for an extra touch of decadence. Whether enjoyed as a quick breakfast, a playful snack, or a unique dessert, these mini pancakes are guaranteed to bring a smile to your face.

Instructions

    1.
Combine all ingredients together except the coconut oil, butter and syrup together in a bowl. Whisk together very well and set aside.
    2.
Preheat a large nonstick skillet over medium heat until hot. Add 2 tsp of coconut oil and swirl the pan. Drop the batter into very small pancakes all around the pan. Be sure to turn your heat down to the lowest setting while you are making the pancakes so they do not burn.
    3.
Once you have filled the entire pan with small pancakes, begin flipping the first pancakes you made. Cook them for a few seconds on the second side. Remove them to a plate. Repeat with the remaining pancake batter, using the coconut oil to grease the pan between batches.
    4.
Place pancakes into a bowl and top with butter and syrup!
