Instructions

    Bring a pot of salted water to a boil. Chop cauliflower into medium and small florets, similar in size to cubed potatoes. Add cauliflower to the boiling water and cook until tender enough to pierce with a fork. Drain and transfer the florets to a mixing bowl.

    Let the cauliflower cool. In a pot over low heat, melt butter. Stir in heavy cream and almond milk until mixed and bubbling. Add shredded cheese and stir until melted, keeping heat low. Remove from heat and stir in sour cream. Set aside to cool and thicken.
