Description

Imagine biting into a warm, subtly savory bagel that defies expectations. These bagels, crafted with almond flour, offer a delightful departure from the ordinary, delivering a surprisingly soft and satisfyingly chewy texture. Their appeal lies in their simplicity and versatility, making them a wonderful addition to any meal.

The preparation is straightforward, allowing you to create these delectable bagels in a remarkably short amount of time. Whether enjoyed on their own as a comforting snack or transformed into a hearty sandwich with your favorite deli slices and cheeses, these bagels are sure to please. A key ingredient in this recipe is xanthan gum, which acts as a binding agent to create the perfect bagel texture.

While it is recommended, psyllium husk powder can serve as an alternative. Whey protein contributes to the bagel's structure, volume, and protein content, though substitutions like almond flour, soy-milk powder, or whole milk powder can be made, keeping in mind that this will alter the final texture and nutritional composition. The recipe calls for parmesan cheese, but feel free to experiment with other slightly melty options such as cheddar, asiago, or Swiss.

It's best to avoid cheeses that are too crumbly or creamy to ensure the right consistency. Once baked, allow the bagels to cool completely before storing them in an airtight container. They will maintain their freshness for a couple of days at room temperature or up to a week when refrigerated.

To revive their warmth and melty cheese, simply microwave for a few seconds before serving. These bagels are a blank canvas for culinary creativity, so feel free to customize them to your liking.

Instructions

    1.
Preheat your oven to 190 C/ 375 F and line a baking sheet with parchment paper. To a bowl, add the almond flour, whey protein, cup parmesan cheese, xanthan gum, baking powder, and salt. Whisk to combine.
    2.
Add the melted butter and whisk until the mixture is crumbly. Pour in the water and mix until a thick dough forms. The dough will look rough and wet.
    3.
Divide the dough into 7 equal balls using a cookie scooper. Place them on the baking sheet. Poke a hole in the middle of each one and stretch the dough to make them look like bagels.
    4.
Top with the remaining parmesan cheese. Transfer the bagels to the oven and bake for 18-20 minutes or until the cheese is golden on top. Take the bagels out of the oven and let them cool completely.
    5.
Eat them warm or store them in an airtight container for later. You can fill them with cream cheese, lox, and chives, or any other filling. Serve immediately.
