Description

Imagine sinking your teeth into a warm, satisfying burrito, where the outer layer gives way to a flavorful explosion within. This recipe offers a delightful twist on the classic, replacing the traditional tortilla with a thin, pliable dough that's both satisfying and lower in carbs. The result is a comforting, hand-held meal that doesn't compromise on taste or texture.

The magic begins with the dough, carefully rolled to achieve a delicate thinness that mimics the texture of a traditional tortilla. Once cooked, it becomes a sturdy yet tender wrap, ready to embrace a generous filling. Inside, you'll discover a savory mixture of seasoned ground beef, cooked until browned and infused with aromatic spices.

Juicy diced tomatoes add a burst of freshness and a touch of acidity, complementing the richness of the beef. Melty, shredded cheese binds the ingredients together, creating a gooey, comforting core. A vibrant green enchilada sauce adds a layer of complex flavor, with hints of chili, herbs, and spices that awaken the palate.

Each bite is a symphony of textures and tastes. The slight chewiness of the dough gives way to the tender beef, the juicy tomatoes, and the creamy cheese, all harmonized by the flavorful sauce. The overall effect is both satisfying and comforting, a hearty meal that leaves you feeling nourished and content.

This adaptable recipe encourages customization. Feel free to add your own favorite fillings to create a personalized burrito experience. Consider adding creamy avocado for a smooth, rich element, or a dollop of tangy sour cream for a cooling contrast to the savory filling.

Diced onions, fresh cilantro, or a sprinkle of your favorite hot sauce can also add layers of flavor and complexity. This recipe is more than just a meal; it's an invitation to explore your culinary creativity and create a burrito that perfectly suits your taste. Enjoy the process of building your perfect burrito, and savor each delicious bite.

Instructions

    1.
The day before, prepare a full recipe of the Carb Manager Low Carb Fathead Dough. Ensure the dough is wrapped and chilled thoroughly before starting the recipe.
    2.
In a large skillet over high heat, cook the ground beef with all seasonings until browned and crumbly. Drain any excess grease.
    3.
Reduce the stove heat to low, stir in the initial portion of enchilada sauce with the cooked ground beef. Cook for 1-2 minutes until the sauce is heated through and evenly coats the beef. Set the skillet aside to cool slightly.
    4.
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). While the beef mixture cools, roll out the chilled fathead dough into a circle larger than a 9-inch pie pan (approximately 13 inches in diameter). Rolling the dough between two pieces of parchment paper can prevent sticking. Carefully lay the dough over your pie pan, pressing it gently into the corners.
    5.
Sprinkle half of the mozzarella cheese evenly across the bottom of the dough in the pie pan. Transfer the seasoned enchilada beef mixture into the dish. Arrange whole grape tomatoes on top of the beef, pressing them down gently into the filling.
    6.
Drizzle the remaining enchilada sauce over the beef and tomatoes, then sprinkle the remaining mozzarella cheese over the top. Take the overhanging edges of the fathead dough and fold them over the burrito filling, leaving the center partially exposed.
    7.
Bake the pie pan in the preheated oven for 50-60 minutes, or until the dough is golden brown and the tomatoes have burst in the filling. Allow the burrito pie to cool slightly before slicing into 8 servings.
