Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
In a large skillet, brown the sausage over medium heat, breaking it apart with a spoon as it cooks. Drain off any excess grease.
Add the thawed and squeezed-dry spinach to the skillet with the sausage. Cook for another 2-3 minutes, stirring occasionally, until the spinach is heated through.
In a large mixing bowl, whisk together the eggs, heavy cream, salt, pepper, garlic powder, and onion powder.
Stir in the cooked sausage and spinach mixture into the egg mixture. Add 3/4 cup of the cheddar cheese and all of the parmesan cheese, stirring to combine.
Pour the mixture into the prepared baking dish and spread evenly.
Sprinkle the remaining 1/4 cup of cheddar cheese over the top of the casserole.
Bake in the preheated oven for 30-40 minutes, or until the casserole is set and the top is golden brown. A knife inserted into the center should come out clean.
Let the casserole cool for a few minutes before slicing and serving.
For a vegetarian option, omit the sausage and add more vegetables like mushrooms, bell peppers, or onions.
The casserole can be assembled ahead of time and stored in the refrigerator overnight. Add about 10-15 minutes to the baking time if baking from cold.
Feel free to experiment with different types of cheese, such as mozzarella, Gruyere, or pepper jack.
To make individual servings, bake the casserole in muffin tins.
