Description

Imagine succulent, slow-cooked pork, its fibers yielding effortlessly to the touch, infused with the subtle perfume of fennel and the earthy aroma of rosemary. This dish is a celebration of simple flavors, harmoniously intertwined to create a truly memorable experience. The pork, having spent hours gently simmering, achieves a melt-in-your-mouth tenderness that is simply irresistible.

Each strand is saturated with the savory essence of the surrounding herbs and a delicate hint of citrus, brightening the overall profile and adding a refreshing zest. The fennel, with its mild anise-like flavor, lends a subtle sweetness and complexity to the dish, complementing the richness of the pork. Rosemary, a classic pairing with pork, contributes a fragrant, woody note that enhances the savory character.

The citrus element provides a welcome counterpoint to the richness, cutting through the fat and adding a vibrant, refreshing lift. The slow cooking process allows these flavors to meld and deepen, creating a symphony of taste that is both comforting and sophisticated. To complete this culinary masterpiece, a luscious, creamy gravy smothers the pork, adding another layer of richness and indulgence.

The gravy, infused with the same aromatic herbs and citrus notes, ties all the elements together, creating a harmonious and cohesive dish. The creamy texture of the gravy perfectly complements the tenderness of the pork, creating a delightful sensory experience. It’s a dish perfect for a relaxed Sunday lunch, offering a comforting and satisfying meal to share with loved ones.

Alternatively, it makes a stunning centerpiece for a festive gathering, promising a memorable culinary experience for all. For those who appreciate a touch of crispiness, consider removing the skin from the pork after cooking and briefly crisping it in a hot oven. This adds a delightful textural contrast to the tender meat and creamy gravy, elevating the dish to another level.

The crackling, golden-brown skin provides a satisfying crunch that complements the soft, yielding pork, creating a truly irresistible combination.

Instructions

    1.
Mince the garlic and finely chop the rosemary. Score the fat of the pork and scatter over the lemon zest, fennel seeds, rosemary, garlic, salt and pepper. Rub the seasonings all over the pork.
    2.
Place the pork into the slow cooker. Quarter the fennel and celery sticks and arrange around the pork, tucking them underneath. Add the water.
    3.
Turn the cooker to high and cook for 5 hours or slow for 8 hours until thoroughly cooked through.
    4.
To prepare the gravy, strain the juices from the pork into a saucepan and skim the fat from the surface. Bring to a boil then reduce to a simmer until the liquid has reduced by half.
    5.
Stir the cream into the mixture and simmer for a few minutes more until you have a thickened gravy.
    6.
Serve the pork with the gravy and caramelized vegetables.
