Description

Imagine tender okra, transformed into a crispy, golden delight. This take on classic fried okra skips the traditional flour-based coating for a satisfyingly crunchy exterior that doesn't compromise on flavor. Each bite offers a delightful contrast: a crisp, well-seasoned shell giving way to the soft, slightly sweet okra within.

The preparation is simple. The okra is first diced into bite-sized pieces, then lightly coated in egg to help the seasoned breading adhere. The breading itself is a carefully balanced mixture of ground almonds, smoky paprika, pungent garlic powder, and fragrant oregano.

This combination creates a savory profile with hints of warmth and spice, perfectly complementing the natural taste of the okra. Pan-frying in olive oil achieves that desirable crispy texture. The okra is cooked until golden brown, ensuring the breading is perfectly crisp and the okra inside is tender.

The result is a side dish that's both comforting and flavorful, reminiscent of southern home cooking but with a lighter twist. This fried okra is a versatile accompaniment to a wide range of meals. Its crispy texture and savory flavor make it an excellent partner for roasted chicken, grilled fish, or barbecued meats.

It would be equally at home alongside a hearty salad or as part of a vegetarian spread. Enjoy it as a satisfying side dish, a tasty snack, or even as a crunchy topping for salads or grain bowls. No matter how you serve it, this fried okra is sure to be a crowd-pleaser.

Instructions

    1.
Clean the okra and cut off the tops and tips and discard. Dice the okra into half inch pieces and set to one side. Crack the egg into a mixing bowl and beat to combine. Set aside next to the okra. Add the ground almonds, salt, smoked paprika, garlic powder and oregano to another mixing bowl. Stir well to combine.
    2.
Tip the diced okra into the bowl with the beaten egg. Use a spoon to stir well. Ensure that all the okra pieces are liberally coated in the beaten egg.
    3.
Tip the prepared breading mixture into the bowl with the egg coated okra. Stir well to combine. Ensure that the okra pieces are well coated in the seasoned breading. The breading should easily adhere to the okra - it doesn matter if the breading is heavier in some places than others. These parts will just be extra crispy!
    4.
Heat the oil in a large skillet over a medium/high heat. Once hot, add the breaded okra pieces in an even layer. Cook the okra on one side until the breading is crisp and golden - about 4 minutes. Turn and fry the other side for a further four minutes or until the breading is crisp and golden all over and the okra is tender and cooked through. Serve hot.
