Instructions

    Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.

    Trim and thinly slice the sprouts and add to a mixing bowl.

    Add the Parmesan, salt, pepper and 1 tablespoon of olive oil and toss to combine, coating the sprouts in the seasonings.

    Transfer to the oven for 15-18 minutes to bake, turning halfway through, until golden and crisp.

    Whilst the sprouts are baking, add the bacon to a pan with the remaining olive oil and fry until completely crispy - so it looks over cooked.

    Add the bacon to a food processor and blitz to form a crumb.

    Remove the sprouts from the oven and sprinkle over the bacon crumb, toss well to combine and serve immediately.
