Instructions

    Thinly slice the avocado and roughly chop the cranberries. Add 2 packed cups of baby spinach to a large serving/salad bowl. Add the avocado and the chopped cranberries and toss to combine.

    Roughly tear the salmon into strips. Arrange the salmon pieces in amongst the salad. Finely chop the chives. Scatter the chives evenly over the salmon salad.

    Add the olive oil, orange juice and syrup to a small bowl. Mix well to combine. You may add a pinch of salt and pepper if desired, but the salmon itself will be salty. Drizzle the dressing over the salad. Mix to coat in the dressing and serve.
