Instructions

    1.
    Place the dried shiitake mushrooms in a small saucepan full of boiling water. Cook until hydrated, about 2-3 minutes. Drain, remove the stems, and cut the caps in half.

    Cut the napa cabbage in half, then into quarters. Remove the core and cut each quarter into 1 pieces. Wash well under cold running water and drain. Add the cut shiitake mushrooms.

    Add the vegetable stock and 1 quart of water to an extra-large pot. Add the soy sauce.

    Add the washed napa cabbage and allow it to wilt, about a few minutes.
    5.
    Add the tofu and bring the soup to a slow boil to heat the tofu through. Taste and add salt to your liking. Serve hot with a bowl of soy sauce on the side. Add sambal to the soy sauce for extra flavor.
