Instructions

    Preheat oven to 380 degrees Fahrenheit.

    Finely chop the onion, sage and rosemary and mince the garlic. Melt the butter in a small pan over a medium heat and add the chopped herbs, onion and garlic, sweating until tender. Set aside to cool.

    Add the cooled mixture to a mixing bowl. Finely chop the tomatoes and add to the bowl along with the walnuts, almond meal and lemon zest. Season with salt and pepper and stir well to combine.

    Beat the egg and add to the mixture. Stir well, binding the mixture together.

    Using your hands, roll the stuffing into 12 even balls.

    Arrange the stuffing balls across a shallow baking tray and drizzle with olive oil.

    Bake for 10-12 minutes until cooked through and golden brown all over.
