Instructions

    Preheat the oven to 400 degrees Fahrenheit. Slice the ends off the zucchini and discard. Slice each zucchini on a diagonal into 4 wedges, each roughly 1 inch thick. You want to end up with 8 even sized wedges. Drizzle over the olive oil and sprinkle over the salt and pepper. Rub the oil and seasonings all over the zucchini slices.

    Spoon half a tablespoon of passata (tomato sauce), onto each zucchini base. Spread the sauce evenly over each base with the back of a spoon. Sprinkle the dried oregano evenly over the passata topped wedges.

    Top each of the wedges with a tablespoon of grated mozzarella, scattering the cheese evenly over the surface. You could use fresh sliced mozzarella or a different grated cheese if preferred, just be sure to account for these changes in your macros. Place a slice of pepperoni on top of each wedge.
    4.
    Arrange the topped zucchini slices evenly across a large oven tray. Transfer to the oven and bake for 12 minutes. After this time, the zucchini should be tender and piping hot through, the cheese melted and bubbling and the salami golden. Serve with your preferred Keto sides.
