    Make the cinnamon roll dough by stirring the almond flour, nutmeg, baking powder, stevia, and egg whites in a mixing bowl. Then, combine the cream cheese and shredded mozzarella in a small pot. Heat the cheeses over low heat until they melt and can be whisked together. Let the smooth, melted cheese cool for just 20-30 seconds off the heat.

Use the plastic wrap to knead the dough into a smooth rectangle. Wrap the dough with the plastic and refrigerate for at least 1 hour. You can also make this dough ahead of time and refrigerate overnight.
