Instructions

    Place beef ribs into a 6-quart Instant Pot. Add water up to the max line (about 4 quarts). Char a 3-inch piece of ginger and 1 small onion over an open flame or under a broiler until all sides are charred. Add the charred ginger and onion to the pot. Set the Instant Pot to HIGH pressure for 1.5 hours.

    While the broth is cooking, toast the spices in a dry, small saute pan over medium heat until fragrant and lightly browned. This enhances their flavor.

    After 1.5 hours, carefully release the pressure from the Instant Pot using the quick release vent or let it release naturally. Open the lid and add the toasted spices and fish sauce to the broth. For easy removal, use a fabric pouch or cheesecloth tied with butcher's twine to contain the spices. Set the Instant Pot to HIGH pressure again for 10 minutes. Release the pressure again.

    Freeze the sirloin steak until very firm. This makes it easier to cut into paper-thin slices.

    Serve the soup piping hot. Add rice noodles (or shirataki tofu noodles) to a bowl, followed by some of the raw sirloin steak. Ladle the hot broth over the meat to cook it instantly.
