Description

Delicate and tender, these crepes offer a delightful culinary experience, perfect for those seeking a refined treat. The crepes themselves are incredibly thin and pliable, possessing a subtle richness that hints at their carefully chosen ingredients. Their texture is smooth and almost melts in your mouth, providing a comforting foundation for the delectable fillings and toppings that await.

Imagine savoring a crepe generously filled with a cloud of softly whipped cream. The cream is lightly sweetened, just enough to enhance its natural flavor without being overwhelming. Its airy texture contrasts beautifully with the delicate crepe, creating a harmonious balance of textures.

The cool, creamy filling offers a refreshing counterpoint to the richness of the crepe itself, making each bite a pure indulgence. To elevate this dessert further, a warm, luscious ganache is drizzled over the filled crepes. The ganache, crafted from high-quality chocolate and cream, has a velvety smooth consistency and a deep, intense chocolate flavor.

As the warm ganache cascades over the cool whipped cream, it creates a delightful contrast in temperature and texture. The rich chocolate notes complement the subtle sweetness of the cream and the delicate flavor of the crepe, creating a symphony of flavors that dance on your palate. These crepes are more than just a dessert; they are an experience.

They are perfect for a special occasion, a romantic evening, or simply as a way to treat yourself after a long day. The combination of textures and flavors is both comforting and decadent, making them a truly irresistible indulgence. Whether enjoyed warm or slightly chilled, these crepes are sure to impress and satisfy even the most discerning palate.

Their elegant presentation also makes them a stunning addition to any brunch or dessert table. Every element, from the thin, tender crepe to the airy cream and rich ganache, is carefully considered to create a harmonious and unforgettable culinary delight. The result is a sophisticated dessert that's surprisingly simple to make and deeply satisfying to enjoy.

Instructions

    1.
Microwave the cream cheese until softened. Blend the cream cheese, eggs, flour, 2 teaspoons of Swerve and xanthan gum together with a stick blender until combined well.
    2.
Preheat a medium-sized nonstick saute over medium-high heat. Using a pastry brush, swipe melted butter over the hot pan. Add in frac14 cup of batter into the hot pan at a time.
    3.
Add the batter into the center of the pan. Swirl the pan 3-4 times to move the batter around in a circle, being sure to move the batter around to cover any holes.
    4.
Allow the crepe to cook over the heat, turning the heat down slightly if you see any smoking. Wait until the crepe starts to turn brown on the edges before using a heatproof spatula to start losing the edges. If the crepe is ready to flip you should be able to get the spatula under the very center of the crepe, lift it and flip it over. It should be very easy. If it is not ready, the spatula will rip the crepe. If this happens, push the crepe back together and allow it to cook for a few more seconds.
    5.
    Repeat with the remaining batter.
    6.
Whip the heavy cream with 3 tablespoons of sweetener using a whisk or mixer with a whisk attachment until stiff peaks form.
    7.
Add about 1 ½ tablespoon of whipped cream to each crepe and then fold it in half and in half again. Repeat with the other crepes.
    8.
Heat ½ cup of heavy cream in the microwave until it is boiling about 45 seconds. Add in the chocolate chips and allow to sit for 5 minutes until stirring it. Once the time has elapsed, stir the chocolate and cream together into a sauce. Line two folded crepes onto a plate. Top with chocolate sauce and remaining whipped cream. Serve immediately!
