Description

Imagine biting into a warm, fragrant roll, its tender crumb studded with juicy raisins and infused with the comforting aroma of cinnamon. These delightful rolls offer a satisfying, subtly sweet experience, perfect for anyone seeking a comforting treat. Crafted with a blend of almond flour, psyllium husk, and fluffy egg whites, the dough comes together easily in a single bowl.

While a stand mixer can streamline the process, a little elbow grease works just as well. The result is a remarkably pliable dough that bakes into golden-brown rolls, boasting a soft, airy interior. The absence of excessive sugars means you can bake them without fear of unwanted burning, allowing the flavors to fully develop.

A unique baking tip to ensure the perfect texture: if, upon cooling, the rolls happen to settle slightly, simply return them to the oven for a brief encore. This quick re-bake coaxes them back to their full, pillowy glory. Enjoy these rolls fresh from the oven, ideally paired with a generous spread of rich butter or your favorite nut butter.

The combination of the warm, spiced roll and the creamy topping is simply irresistible. They're equally delicious served alongside a cup of hot tea or coffee, making them a versatile addition to breakfast, brunch, or afternoon snack time. The natural sweetness of the raisins complements the warm spice of the cinnamon, creating a harmonious balance of flavors that will tantalize your taste buds.

These rolls are best enjoyed fresh, retaining their delightful texture and aroma for up to three days when stored at room temperature. For extended enjoyment, these rolls freeze beautifully, ensuring you always have a comforting treat on hand whenever the craving strikes. Simply thaw at room temperature or gently warm in the oven before serving to restore their soft, fresh-baked quality.

These rolls are a testament to the fact that you can enjoy satisfying and flavorful baked goods without compromising on your dietary preferences.

Instructions

    1.
Preheat the oven to 350 F. In the stand mixer bowl, combine the almond flour, psyllium husk, kosher salt, baking powder, cinnamon, and raisins. You can use a whisk to combine the ingredients as well.
    2.
Add in the egg whites and beat until combined. The mixture will look sandy at this point. Once the boiling water is added the flour mixture will come together into a dough.
    3.
Add the apple cider vinegar to 1 cup of boiling water. Slowly pour the boiling water into the flour mixture. Beat until well combined.
    4.
Use a dough scraper to turn the dough out onto a parchment-lined baking sheet. Then cut it into 6 equal pieces. You can use the dough scraper to cut the dough.
    5.
Roll each piece into a round ball. Push any of the raisins on the outside of the dough ball to the inside, so they do not burn. Give plenty of space between the rolls as they will rise considerably.
    6.
Place the tray in the oven and bake for 50-55 mins. Try to remove the rolls from the oven before the raisins burn, but once the dough is fully cooked. If they deflate as they exit the oven, quickly return them and bake for another 10-15 minutes.
    7.
Remove from the oven and allow to cool before placing them into an airtight container. The rolls should last up to three days at room temperature. In the freezer, rolls last up to three months if stored properly.
