Description

Imagine a slice of tender bread, or a warm muffin, bursting with the bright zest of orange and the tartness of cranberries. This delightful bake evokes the comforting flavors of classic American recipes, reimagined for a modern palate. The sweetness is carefully balanced, offering a satisfying treat without relying on traditional sugars.

The secret lies in using natural alternatives to sugar, allowing the vibrant citrus and berry notes to truly shine. Freshly grated orange zest infuses every bite with its aromatic essence, while the cranberries, scattered throughout, provide bursts of juicy tang. For the best texture, consider chopping the dried cranberries before adding them to the batter; this ensures they are evenly dispersed, preventing any one slice from being overwhelmingly fruity.

A hint of vanilla extract complements the orange, creating a harmonious flavor profile that dances on the tongue. A delicate glaze, made with a powdered sweetener alternative, adds a touch of elegance and extra sweetness. For an exceptionally moist and flavorful loaf, try piercing the top with small holes after baking, allowing the glaze to seep down into the bread as it cools.

This creates pockets of intense flavor and ensures that every crumb is infused with deliciousness. The addition of Greek yogurt is another key element, contributing a subtle tang and incredible moisture. Much like sour cream in traditional baking, the yogurt helps to create a tender crumb and prevents the bread or muffins from becoming dry.

The result is a light yet satisfying treat that is perfect for breakfast, brunch, or a delightful afternoon snack. The combination of flavors and textures makes each bite a memorable experience, a delightful balance of sweet, tart, and citrusy notes that will leave you craving more. This bread is more than just a baked good; it's a celebration of classic flavors, thoughtfully crafted for a truly enjoyable experience.

Instructions

    1.
Preheat the oven to 350 degrees. In a large mixing bowl, whisk together the eggs, egg whites, stevia, vanilla, greek yogurt, and orange zest. Melt the butter and whisk into the bowl. In a separate bowl, sift together the flour, baking powder, and salt. Whisk the dry ingredients into the wet ingredients and temporarily set aside.
    2.
Line a bread loaf pan with parchment paper. Use a spatula to fold the dried cranberries into the batter. Then, immediately pour the batter into the lined pan. Spread the batter and smooth it over if needed. Bake the loaf for 50 minutes, using a toothpick to test for doneness. After baking, let the loaf cool for about 5 minutes. Then, lift it out of the pan and allow it to continue cooling.
    3.
While the bread is baking, you will want to make the sweet vanilla glaze. Melt the butter and pour it into a small mixing bowl. Whisk the vanilla and Swerve into the butter until you have a chunky paste. Then, whisk in the heavy cream only ¼ teaspoon at a time. Only whisk in heavy cream until you have a smooth but thick glaze. After you lift the finished orange cranberry bread loaf out of the pan to finish cooling, spoon the glaze onto the bread. As the heat from the loaf melts the vanilla glaze, use the back of a spoon to spread it over the top. Slice for serving once the glaze cools to a sticky texture.
