Description

Imagine a warm, comforting seafood bake, where the delicate flavors of the ocean meld together in perfect harmony. This dish begins with a generous bed of tender zucchini noodles, their mild sweetness providing a light and refreshing counterpoint to the richness of the seafood. Atop this verdant base rests a medley of fresh white cod, succulent shrimp, and briny clams, each element contributing its unique character to the ensemble.

The cod, with its flaky texture and subtle taste, forms the heart of the bake. The shrimp, plump and juicy, offer a delightful burst of sweetness, while the clams, steeped in their own savory liquor, impart a distinctive maritime essence. The seafood is gently baked until perfectly cooked, allowing the natural flavors to meld and intensify.

The zucchini noodles soften slightly, absorbing the delicious juices released by the seafood, creating a symphony of textures and tastes. As you bring the dish to the table, the aroma alone is enough to entice the senses – a fragrant blend of the sea, mingling with the subtle earthiness of the zucchini. Each bite is a journey of discovery, a harmonious blend of flavors and textures that dance on the palate.

Picture yourself savoring the flaky cod, followed by the satisfying pop of a perfectly cooked shrimp, and the briny tang of a clam. The zucchini noodles, now infused with the essence of the sea, provide a delightful counterpoint to the richness of the seafood. This bake is not just a meal, it’s an experience.

It’s a celebration of fresh ingredients, simply prepared to highlight their natural goodness. It’s a dish that’s both satisfying and light, perfect for a cozy night in or an elegant dinner party. Pair it with a crisp, dry white wine to further enhance the flavors and create a truly memorable culinary experience.

The wine's acidity cuts through the richness of the seafood, while its fruity notes complement the sweetness of the shrimp and the earthiness of the zucchini. This seafood bake is a testament to the fact that healthy eating can be both delicious and satisfying. It's a dish that nourishes both the body and the soul.

    ½ cup, shredded

Instructions

    1.
Preheat an oven to 350 degrees Fahrenheit. Spiral the zucchini into thin noodles and place them directly into a sprayed glass baking dish.
    2.
Prepare the cod, shrimp, canned clams, and garlic clove. Chop the cod and shrimp (de-veining and peeling the shrimp is necessary). Mince the garlic.
    3.
Melt the butter in a wide skillet over medium-high heat. Toss in the proteins and garlic. Cook until the cod is just cooked through, about 4-5 minutes.
    4.
Add the salt, pepper, onion powder, Italian seasoning, and bay leaf. Stir until the ingredients are coated.
    5.
Pour the cream and lemon juice into the skillet. Stir and let the liquid simmer for another 4-5 minutes. Then, set the pan aside to cool and let the sauce thicken for another 5 minutes off the heat. Remove the bay leaf.
    6.
Pour the Pesce sauce over the zucchini noodles in the baking dish. Cover the top of the dish with the parmesan cheese.
    7.
Bake the dish for 25 minutes, until heated through, the zucchini is al dente, and the cheese is melted.
    8.
Serve on two plates and enjoy!
