Instructions

    Add the coconut cream, coconut oil and coconut butter to a small saucepan over medium heat. Whisk in the arrowroot powder until dissolved and no lumps remain. Bring to a gentle simmer and keep whisking until it thickens, about 3-5 minutes.

    Transfer the coconut cream to a blender or food processor. Add in the frozen blueberries, a berry powder, vanilla extract, coconut extract, sea salt, and squeeze in the lime juice. Blitz to a smooth puree and then fold through the desiccated coconut.

    Equally fill the popsicle molds to the top. Carefully place the handles into the molds. Transfer to the freezer and freeze for a minimum of 4-6 hours. For best results freeze overnight before removing the popsicles from mold and serving.
