Prepare the Avocado: Halve the avocados, remove the pits, and scoop the flesh into your food processor or blender.
Combine Ingredients: Add the cocoa powder, plant-based milk, maple syrup, vanilla extract, and salt to the food processor or blender.
Blend Until Smooth: Blend all ingredients until the mixture is completely smooth and creamy. You may need to stop and scrape down the sides of the bowl a few times to ensure everything is well combined.
Adjust Sweetness: Taste the mousse and adjust the sweetness by adding more maple syrup if needed.
Chill (Optional but Recommended): For best results, transfer the mousse to serving dishes or glasses and chill in the refrigerator for at least 30 minutes to allow it to firm up slightly.
Add Toppings: Before serving, top with vegan chocolate chips, fresh berries, and/or chopped nuts, if desired.
Serve: Enjoy immediately or keep chilled until ready to serve.
For a richer flavor, use dark cocoa powder.
If you don't have maple syrup, you can use agave nectar or another liquid sweetener.
