Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
In a large skillet, heat olive oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
Add spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
In a mixing bowl, combine the cooked spinach mixture, feta cheese, breadcrumbs (if using), and fresh herbs. Season with salt and pepper to taste.
Stuff each mushroom cap with the spinach and feta mixture, mounding it slightly.
Place the stuffed mushrooms on the prepared baking sheet.
Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
Let cool slightly before serving. Garnish with extra fresh herbs if desired.
You can add a sprinkle of Parmesan cheese on top of the stuffed mushrooms before baking for extra flavor.
For a richer flavor, use a combination of feta and ricotta cheese in the filling.
Mushroom stems can be finely chopped and added to the filling to reduce waste and add extra flavor.
