Keto Peppermint Swirl Cookies
Gluten Free / Quick Easy

Keto Peppermint Swirl Cookies

⭐ 4.7/5 (1266) 🔥 140 cal

One of my favorite things about the holidays is Christmas cookies! You will not need to feel left out of the fun with this low carb cookie recipe. Sweet, tender sugar cookie dough is flavored with bright peppermint extract. Part of the cookie dough is colored red and green and then blended into a neutral colored dough to give a peppermint swirl look to the cookie. The colors are swirled together into a log and then cut and rolled into a ball. The cookie dough balls are placed onto a cookie sheet and flattened out with the bottom of a cup coated with granulated sweetener. The result is a crispy, tender, peppermint cookie just right for Christmas time. If the dough becomes too difficult to handle, you will need to place it in the freezer for several minutes to allow the dough to firm up. This will help it be easier to handle, cut, and roll into a ball. You will want the cookie dough slightly chilled when you are flattening them out on the baking sheet as well. No, the food coloring is optional, but it gives it a lovely festive, peppermint look. You can opt for natural food colors if you would like. This recipe uses gel food coloring, which has less water than traditional food colorings. The gel food coloring will help the dough from becoming loose. You can use traditional food colorings but only add a few drops at a time. These cookies will not need to bake very long in the oven as you do not want them to develop much browning on the edges - this will allow the peppermint swirl colors to stay bright. Allow the cookies to cool completely on the baking sheet (they will continue cooking on the hot baking sheet) and set. Then remove them to a cooling rack. These delicious peppermint cookies would be great with this Peppermint Mocha Keto Coffee! https://www.carbmanager.com/recipe/peppermint-mocha-keto-coffee. *Note - The food color is not listing in the ingredient list, but you will need a red and green food color.

This quick and easy Keto 90-second bread is perfect for those on a ketogenic diet. Made with almond flour, psyllium husk powder, egg, chia seeds, and baking powder, this bread can be mixed in a coffee mug and "baked" in the microwave in just 90 seconds. You can enjoy the whole bread or slice it into 4 pieces for portion control. It's delicious topped with butter, almond butter, or other healthy fats. Adjust the cooking time based on your microwave's wattage, adding 30 seconds if needed until it's puffed and cooked. After microwaving, let it cool in the mug for 2-3 minutes to allow it to set. Enjoy it with Keto-friendly nut butter, cured meats, cheeses, or alongside dishes like Keto Chicken Thighs with Creamy Artichoke sauce to soak up the sauce. Allow the bread to cool before consuming to avoid a soft texture.

This Carnivore Omelet recipe offers a delicious and satisfying meal suitable for any time of day. It features a seasoned omelet filled with cooked ground beef and parmesan cheese, providing a protein-rich and flavorful experience. Feel free to customize the recipe by swapping the ground beef with ground turkey, pork, chicken, or lamb, ensuring you use high-quality, organic, and grass-fed or pasture-raised meat. For dairy options, consider using A2 and low-lactose/lactose-free cheeses like cheddar or Monterey Jack instead of parmesan, or omit cheese altogether based on your dietary preferences. Enhance the flavor with your desired spices and herbs, and top with a dollop of sour cream for added richness. While omelets are traditionally a breakfast dish, this version is substantial enough for lunch or dinner. Experiment with different proteins and cheese toppings to create a variety of exciting Carnivore diet recipes. Parsley is suggested as a garnish but can be omitted for a strict Carnivore diet.

Keto Chocolate Peanut Butter Vegan Cheesecake Bites

⭐ 4.7/5 (1545) 🔥 214 cal

These ultra-creamy Keto cheesecake bites are vegan and feature a rich chocolate crust and velvety peanut butter "cheesecake" filling. This no-bake recipe is easy to prepare. The filling is made of cashews, almond milk, peanut butter, and coconut cream. Boiling the cashews softens them for blending, creating a creamy center. A high-speed blender or food processor is recommended to ensure a smooth mixture. The crust uses almond flour, making it gluten-free, Keto-friendly, and vegan. Toasting the almond flour enhances the crust's flavor, but crushed vegan Keto cookies can be used as a substitute with reduced sweetener.
