
Keto General Tso's Chicken
General Tso's is a classic Chinese food that is well known and loved for its delicious glaze covering chicken and broccoli. This entree has been developed to make this Chinese food recipe Keto-friendly! Succulent chicken thighs are diced and then tossed in a marinade made from kosher salt, soy sauce, dark soy sauce, egg yolk, and arrowroot powder. The chicken is shallow-fried in a large wok until crispy, golden brown. Broccoli is carefully steamed until al dente and then stir-fried with spicy dried chilies, garlic, and ginger, which is later combined with the cooked chicken thighs. Then the entire dish is glazed with a sauce made from a mixture of soy, dark soy, and rice vinegar for a pop of flavor. You do not have to have a cheat day to enjoy low carb Chinese recipes. Chicken thighs tend to do better with Keto dieters due to it's higher fat content. It is also more forgiving if overcooked. However, you can use chicken breast here instead if you would like to. You can substitute with regular soy sauce (it just will not have the same depth of flavor and color), mushroom soy sauce, or double black soy sauce. Frying the chicken as the recipe describes below helps to develop the dish's flavor. However, if you are short on time or patience, you can decrease the ".5 cup avocado oil" to 2-3 tbsp of oil and simply fry the entire batch of marinated chicken until cooked. Then you will not have excess fat at the end of that step, which will save a lot of time. This dish would, of course, be great served with cauliflower rice. The fiber from the broccoli and cauliflower rice along with the fats in General Tso's will make for the most filling meal.
